Colli Euganei DOC Rosso
GRAPES: Cabernet Sauvignon, Cabernet Franc, Raboso
ALCOHOL: 12.50%
VINIFICATION: The grapes are fermented for about 20 days with indigenous yeasts, with temperature control in steel tanks, with repeated punching down, to extract the greatest amount of persistent aromatic substances that characterize this wine. At the end of the primary fermentation the malolactic fermentation takes place in the presence of the skins and the racking follows. Part of it is placed in oak barrels and left to mature for 16-18 months. It is then assembled and bottled, where it ages for at least 2-3 months before being put on the market.
CHARACTERISTICS: A wine of great persuasion, vigorous but at the same time fruity and soft. Ruby red in color, the nose is intense, with captivating aromas of raspberry, blackberry and vanilla, tobacco and chocolate. On the palate it is full body, rich and harmonious.
PAIRING: Perfect with slow and prolonged cooking red meats such as braised meats, stews, duck with orange.
